Herb Gravy (Fake Sausage Gravy)

½  c safflower oil

2/3 c wheat flour

½ tsp ground white peppercorns

½ tsp salt

6 c low fat milk

1 T fresh thyme

1 T fresh rosemary

3 T fresh sage

Heat oil, flour, pepper and salt on high heat in a large cast iron pot stirring constantly until it begins to turn brownish like peanut butter. Add milk in a steady stream while stirring to prevent lumps. Add herbs and heat through.


Pear roast w/ goat cheese

1 tsp fresh thyme

1 tsp fresh rosemary

3 T raw sunflower seeds

2 T melted butter

2 pears (Anjou) coarsely chopped

Sprinkle sea salt

Sprinkle black pepper

½ c soft goat cheese

Mix thyme, rosemary, seeds, butter, salt, pepper and pears together and roast at 350 for 10 to 20 minutes or until fragrant.

Drop small pieces of goat cheese evenly on top of mixture and return to oven until cheese is warmed through.
